    Vellón de Fuentesaúco Zamorano DOP aged cheese, manufactured by hand with raw sheep milk of the Churra and Castellana breeds, pure and native breeds of the province, with recognized dairy aptitude, and very remarkable quality levels.

    Natural brown rind, with well marked and defined design, bathed in olive oil during maturation. The paste is firm and compact, of yellowish ivory colour, being able to present eyes of small size, distributed evenly throughout the cut. It has genuine aromas and flavours, typical of raw sheep’s milk, well developed and persistent on the palate. Its taste and olfactory characteristics in which we can remember sheep’s milk, cooked butter, nuts, etc. due to the traditional grazing system and its long maturation.

    Store in a cool, dry place. Recommended storage temperature 4º -  8°C.

    Temper the cheese outside the refrigerator for the time necessary for it to reach a temperature of around 20°C at which its flavour and aroma are at their full intensity.
