Escalivada: a classic of Mediterranean cuisine. This mixture of vegetables is one of the most important dishes in Spanish gastronomy. Although in the past eggplant, bell pepper, onion and tomato were roasted on a wood stove, it is becoming increasingly difficult to put this technique into practice.
