Made from milk of sheep (32% min.), goat (30% min.) and cow (23% min.).
Appearance: It has an ivory colour with pink and orange tones. When cut, the brightness and original size of the curd grain can be appreciated, as a result of its delicate and careful production process. Aroma: Aromatically it has a fresh smell with hints of fresh goat's milk. Flavour: Mediterranean fruit flavours stand out with roasted and caramelised notes typical of the sheep's milk maturation. Texture: Its unctuous texture, but consistent and resistant to cutting.
