Quesucos de Liébana are made in the Liébana region of Cantabria and have a marked artisanal and traditional character, being made in this region since ancient times and becoming the most representative of the area. It is a mountainous area with high rainfall and limestone soils, characteristics that favour the cultivation of crops, the basis for livestock feed.
This cheese is made with milk from Pasiega and Frisona breed cows and has a mixed coagulation and soft paste with mouldy rind. Slightly spicy fresh lactic flavour.
This cheese has an Appellation of Origin DOP status.
