Cured goat's cheese rom the Murciano-Granadina breed. Produced in Murcia, enjoys an Appellation of Origin (DOP) status.
It has a creamy texture and mild flavour. Pleasantly acidic and slightly salty. The paste is firm, compact and with eyes, waxy yellow colour, intense smell and aromas with vegetal notes (dried fruits), evolved lactic, reaching roasted notes in the oldest pieces. Its rind is edible with a waxy yellow to ochre-coloured.
