Cheese made with milk from the Caprina native goat breed of the islands of Gran Canaria, which produce milk of exceptional quality. Coated with paprika which gives it a characteristic flavour.
External colour: red coated with paprika. Internal colour: ivory white. Taste and smell: very slightly acidic, weak lactic. Cut appearance: compact, closed, with some small, evenly distributed eyes. Texture: medium roughness, somewhat moist and weak elasticity.
